Origin of Kulfi
Kulfi traces its roots to North India, Persian technique, and the slow-set kulfi traditions of the Mughal era.
Kulfi is India's traditional dairy dessert: dense, creamy and slow-set instead of churned. Its roots are often linked to 16th-century North India during the Mughal era.
The word kulfi, sometimes written qulfi, comes from Persian and is associated with a covered cup. The dessert grew from techniques for freezing sweetened liquids into rich chilled treats.
Before modern refrigeration, kulfi was a rare indulgence. Today it is loved from street stalls to modern dessert counters because it keeps that same thick, nostalgic character.
